Go ahead and buy the BIG bag of pistachios from Costco, because you are going to need a lot of them! Since Costco only has shelled, roasted and salted pistachios in my neck of the woods, that's what I used. I just omitted some of the salt in the recipe! These cupcakes are moist and packed with flavor, so what are you waiting for? Start Baking!
